squash burritos, not an exact recipe, but I sautee w/onion, peppers, potatoes, corn, chicken, leftover pot-roast, whatever. Spices, cumin, paprika, oregano, cayenne, bit o cinnamon. other burrito stuffins on hand, rice, beans of choice. chopped tomatoes, avocado, cilantro, raw onion, jalapenos. Infinite variations possible.I do love squashi, so versatile...
Yeah, having a garden is great. We garden in a hard climate here though, can freeze late and early. One year I started all of these exotic melons and tomatoes indoors, we prepared a huge bed, actually found some friends willing to help plant. Got everything in, 3 days later it frosted. First week of June. It was heartbreaking! So, we sobbed incontrollably and then re-planted. I remember that year we had a good crop of corn and japanese eggplant...lol...
It's a constant surprise. This year we have millet everywhere, the birds planted it:) We're training them to grow their own food, we're tired of buying it:)

We all need to garden, especially now, IMO. Bring back Victory Gardens!
