Back before I decamped to the 'burbs, I had a whole garden given over to winter squash. Mostly butternut & buttercup, because the flesh is so sweet & packed w/ vits, & they're such a nice size. Also pumpkins and delicata.
It deserves the place the natives gave it IMO -- what other vegetable captures the heat & light of summer and holds it for us into January and beyond?
Now I'm relegated to buying it -- I'm thinking of buying a small hubbard to put in my cellar -- can freeze the leftovers after I bake it in a couple of months . . .
