Interested in losing weight but need more info to assure myself.

I'm now 27 years old, single mom, work full-time m-f, college full-time, and I really need to get myself back to where I was comfortable.
I weigh currently 225lbs which to others when they see me, they say I look 150 and get shocked when I say 225, they always ask me where am I hiding it O.o
Well I work in an office so I know some know how it is sitting at a desk with no movement and appetites just make you want to eat snacks, food, etc. Well I would go on this diet of very low calories, not eat after 8pm and and I'd lose a few
pounds that I went from a size 18 to a size 14 in a few weeks. Well my schedule has changed and I really am getting down of me gaining weight again. I have done the fasting for a few days but go back to normal and I did lose weight doing that but I never thought of doing it more than a few days.
Well I have been reading this forum of people fasting and losing weight. Well I want to do this and I can dedicate myself to do this I'm sure of. But I have a few questions for those who have gone on a fasting more than 7 days.
After completing your last day goal, how did you keep the weight off?
What happens when you eat after you reach that goal?
Has anyone got seriously ill after reaching their goal and then eat?
What are some strategies that worked during and after the goal?
Any information would help me.
I really want to be able to be comfortable and happy again.
