Technically, through man's definitions, this has happened in any number of ways when a species is split up or divided into isolated populations through any number of causes such as natural disasters.
Generally the development of a "new" species due to these mechanisms are the result of both environmental and dietary changes, along with the new, more limited gene pool.
Technically, given that there can be "different" species of say a "swallow", humans could be classified as different species based upon some of the same criteria used in categorizing animals...
A for instance is the species of Neanderthal, that some have theorized were just a result of nutritional deficiencies giving rise to cretinism and thought to be a separation or split from Cro-Magnon. Again, a separation of populations limiting gene pool, with both contributions from diet and environment. Of course this all still remains speculation and dating simultaneous living conditions of Cro-magnon, and Neanderthal this far back is rather difficult to prove with 100% certainty given that we must put our "faith" in dating methods being unequivocally correct. Being off just a few generations, and given the theory of dietary\environmentally caused cretinism, a sudden, or even slow evolving dietary change in the area would provide for the end to the cretinism and thus the Neanderthal.

An aside - A rather interesting note here is that diet changed genetic predisposition... gives pause, no? We know this to be fact, however, medicine ignores it, and classrooms fail to teach it.
Back on topic - This is all however, man's subjective interpretations of, and definition of, species we are talking about here which permit these arguable "discrepancies" to be so...
Evolutionary splits get a bit harder to prove in a "genus", or even "family".
