You are wrong, speciation has been observed and the process of speciation is currently being observed in birds, fish, reptiles, and reptiles. And these are just the example I know of, I don't follow this closely so there may be far more.

The claims behind creationism can and HAVE been falsified - the simplest one for people to understand would be the age of the earth and the occurrence of a world wide flood both of which are easily debunked.
