kombucha SCOBY: Not the tea, the so-called "mushroom" any nutritional studies? Info? Recipes?

hi, forum folk,

I'm interested mainly in the "mushroom"; the SCOBY

and what there may be 'out there' about the nutritional value of the SCOBY
(please note, I know all about the "tea",and love it. Don't need any basic links...)

The thing is--I hear that the SCOBY is good for dogs (dried, like rawhide chews)
and for horses...and I've tasted it raw and found it a lot like squid, (which is a lot like tofu..but the tedxture is something else...)

but, i wonder about the food value and possibilities--I have lots of scobies in the 'fridge...and i 'intuit' they are good blended, and in the compost pile...

Anyone have links, or experience?(even more precious!)
