I would think they are all cooling, because they come from the tree, are cold, and preferred on a hot day over tea. I would keep the apples out over night instead of in the fridge before juicing them... so they are warm that way aswell.
To heat them up... yeah ginger would work good. And as for the hot/cold thing... what helps me might not help you. So drinking the raw juices might not be best for you... and might actually hurt your conditions. But then again it might help ya, you would have to see how you react. Or maybe drink it while having lots of hot foods.
