I would say that one of the main differences between distilled water and that of reverse-osmosis is the waste produced by RO: the process will only recover about 5% to 15% of the water entering the system, especially in residential use. It also does not remove all contaminants.
Distilled Water however is completely pure, and does not contain any contaminants and produce any waste to go with it.
Spring water is ok but does contain inorganic minerals which can clog the system given enough time, as these are not bioavailable: unlike the minerals found in plants that have been metamorphosed organically by the plant itself.
Water at room temperature for fasting has always been considered to be ideal.
It isn't surprising that your holistic healer/naturopath does not recommend fasting or believes it to be dangerous. Naturopathy is leaning more and more towards Allopathic approaches in the treatment of disease, and has lost much of its way in the Alt' health field. You are best to avoid that Doctor as you have stated.
Natural Hygienic practitioners are some of the only ones with their original ideals intact, but even then there are dissenters within the ranks.
