Update-I phoned bulkfood mas my e-mail bounced back..and they told me the following

-their BAKING SODA is ANHYDROUS,meaning it is 100% pure,without water having been added to it..

Now how to convert the 100% to a 10% one..
A method to do this easily- if one can be find it will mean HUGE SAVINGS
and CLICK on the BAKING is item #42417

Note as per 2007 50% of the citric acid comes from China...
