I agree that our food, air and water supply are more toxic these days, but the body can still handle this toxic overload with relative ease compared to yesteryear; the body is designed by nature to rid itself of any toxic waste whether feeding externally or feeding internally, it's just that fasting will greatly accelerate the cleansing and healing processes regardless of the level of toxicity.
As you say, soils are indeed now more depleted of minerals and other vital food elements than in Sheltons time, and because of this I am an advocate of consuming organic supplements, but this is only for what some refer to as "Optimum" health: just so long as you are eating a diet that is varied and not ideal, does not mean that anyone is now more susceptible to suffer from a deficiency disease such as scurvy and pellagra, (which is very rare in developed Countries) and therefore are still eligible for a long and protracted fast.
