FDA values of pH of certain fruits-April 2007

In the brief radio interview of March 30th Jim Humble said that one could use lemon juice, good as citric acid as it had a pH of 10 ?! Unsure if he was talking about something else as the audio stream became dead.

"So as per the FDA these fruits have the following pH:(approximative)

http://www.cfsan.fda.gov/~comm/lacf-phs.html
dated April 2007

1-Cranberry Juice,Canned:2.30 - 2.52

2-Grenadine Syrup.......:2.31

3-Lime Juice............:2:00 - 2.35

4-Lemon Juice...........:2:00 - 2.60

So as the activators, Lime Juice and Grenadine syrup(!?) are the best activators..

Remember-those using citric acid --over 90% comes from China and derived from MGO CORN.Could be the same thing in the US/Canada..

On a yearly basis the TOTAL annual harvest of lemons/limes is 120,000 tons while the production of citric acid is 600,000 tons..(this in 2003).

And usage of citric acid ,there is a link to teeth erosion of babies, children, effects on the tooth enamel,..

see

#251,Sept 2003 ;do a search for citric acid

Organic citric acid ? Well"from a chemical perspective it is an organic compound,it contains carbon"

And for the medically enclined, from the Journal of Endourology this recent article

"Quantitative Assessment of Citric Acid in Lemon Juice,Lime Juice, and Commercially Available Fruit Juice Products,Kristina L.Penniston,MD,Stephen Y. Nakada,MD,etc..

Journal of Endourology,March 1,2008, 22(3):567-570

Read the results and conclusions- fresh fruits win..no surprise here..

Endourology(as per the medical dictionary):the branch of urologic surgery concerned with closed procedures for visualizing or manipulating the urinary tract

"Citric acid produced by cultures of Aspergillus Niger (the black stuff-mold we see around kitchen sinks, etc.).which are feed a sucrose or glucose-containgng medium to produce citric acid.

The source of Sugar is corn step liquor, molasses, hydrolyzed corn starch or other inexpensive sugary medium. After the mold is filtered out the resulting solution, citric acid is isolated by precipitating it with lime(calcium hydroxyde) to yield calcium citrate salt, from which acid is regenerated by treatment with sulfuric acid."

As lime is in short supply thus some limestone quarries in China or ? are busy I guess..
