That sounds great bling. It's a huge change for you and no need to rush it. When you do your fasts you will hopefully find your desire for raw food increases naturally so there is no need to force it.
The more I eat my foods at room temp the more I like them that way. Some salad foods especially do wilt quickly though so refridgeration is still handy! If I'm not going to eat a salad for half a day or more I'll put it back in the fridge and in any case I will seal it in a container. I do try to take it out of the fridge an hour or two before I eat it again though. And I am leaving more and more of my veggies in the fruit bowl, both to ripen more like tomatoes, and just so they don't have to 'warm up' again when I'm ready to use them. The fridge is there to keep them beyond their wilt-dates. The most obvious for that with me has always been bananas. I used to buy them buy the box load for my family's use and they would ripen in the box, but when fully ripe they'd go into the fridge to be used in smoothies and cakes. But putting them in the fridge too early would stop them ripening properly. It's something that you learn as you go, which foods are best fridged and which aren't, and as my season heads towards cooler times I will be fridging less and less.
I do prefer to eat the food whole myself but like you said you're getting the food into you and that's what counts. :) Glad to hear you're starting to have good results with it. :)
