I used to get food dreams a fair bit, I think the more you are thinking about food during the day the more that is likely. We think about food normally of course, we eat it, we shop, plan and cook our meals but don't really 'think' about it so much. While we are abstaining from food the thoughts take on a different quality- they are more conscious, more noticable so to speak. It is natural that they will carry over into our dreams at night.

I think exercise is quite safe while fasting, I've never had any trouble doing it and have often exercised to exhaustion while fasting. Some fasting doctors say that rather than spending your days resting it is more beneficial to fast actively and particularly get your sweat glands active to increase the output of toxins and therefore reduce the effects of having those toxins inside your body too long waiting for other methods of expulsion. This may be even more useful nowadays than it was in Shelton's time due to the amount of chemicals we ingest with our foods- not to mention the over consumption of meds- and fasters today may have more intense detox symptoms as a rule than was the case back then.

Also resting while fasting is useful for healing of major illness or injury to the body, but another major reason for resting is to preserve the stores of the body so that we stay alive long enough to effect those repairs. If the main goal of a fast is weight loss though for example, surviving long enough is not the immediate issue actually reducing the amount of stores is, so that reason to rest is not relevant.
