Deactivation of enzymes is not a bad thing as far as digestion goes.There are 3 types of enzymes;metabolic,digestive,and food .I was speaking about food/plant enzymes and there role in health and vitality.Catalysts increase chemical reactions while not being consumed or destroyed while doing this.These are found in all living things but are not a living thing.Macro assimilation of such nutritional components is a debatable issue.Dr. Gabriel Cousens addresses this issue in his book Conscious Eating he believes enzymes are assimilated in there complex protein structure.This would explain the energy found in a plant based diet that is rich in raw fruits and veggies.Bromelain and papain are proteletic enzymes which are found rarely in the plant kingdom.These enzymes work on protein only,enzymes work within very narrow scopes and perform specific functions.My personal believe on this subject is a mute point.
