Hi boydanny,

Your question: Can washing vegetavbles in peroxide containing water after harvest/purchase before storing in the refrigerator reduce the nitrate/non protein nitrogen content. If so, what proportion peroxide to water and how long leave the vegetables in the water before removing and draining?

Answer: Washing Fruits & Vegetables with a solution of peroxide in the water is very helpful !

One may use 3% peroxide to add to the wash water, like maybe a Tablespoonful in a quart of water ?

In the case of trying to Remove or Neutralize the NPN of Poor quality Fruits and Vegetables by using peroxide: This may work Best if the Vegetables are cut open to expose the inner Tissue to the soak ?

Example: Take and add 1 Tablespoonful of 3% peroxide per quart of water and cut the ends off of a stick of celery and then cut the celery in 1/2 so it will not be too long, so that it will lay in the pan of water with the peroxide and let sit in the refrigerator overnite !

This may help Neutralize the NPN and make a Poor Quality food into a Better Quality food !

This can also be done with most other Fruits and Vegetables !

Or one may use a quart or gallon jar to hold the peroxide water to soak the Fruits and Vegetables in overnite ?
