I haven't ever had nightmares while fasting. I do notice changes in my dreams while fasting, they seem to be more easily remembered on waking if not more vivid. I think opposite to you I usually wake more refreshed than usual so have the luxury of remembering them rather than being woken by my kids.
I hope the nightmares don't last too long for you, they sound like they are distressing you a lot. Not all nightmares are bad though, and hopefully they are a sign of other changes going on as well. It might help to refer to a dream interpretation dictionary or something similar. Don't take what is written in them as gospel though, dreams are very personal and the popular interpretations aren't always correct for each individual- just use them as guides to better understand them.
You can also ask for specific dreams consciously, just write on a bit of paper the dream you would prefer and slip it under your pillow before sleeping. It acts as a message to your unconscious and does really work. :) So maybe that will help you move on to different and less stressful dreams.
