electrolyte water is fine and actually a good idea as candida will rob you of electrolytes and many actually take supplements to try to replace them. Purified water is debatable as it thought to possibly rob the body of nutrient with its negative ions atttracting positive ions in your body mineral stores. I might have that reveresed but basically purified water will attract minerals and leech them out of your body. There are many differeing opinions on this. I choose to stock with spring water. If you must drink purified you need the added electrolytes.

tomato- too much Sugar and most of stay away. it depends on your level of candida really, if you do not experience symptoms from it then most likely you are fine.
apple- I would say no. Candida feeds on Sugar of any kind even fruit. So I would not be eating fruit in the early part of the diet
brown rice- many on this board eat it with no trouble. Sometimes I can and sometime i cannot.

The diet is really individual. That is what many people do not understand. There are so many variables here. How sick you are, how long you have had it, are you prone to keep relapsing, does a particular food give you symptoms or cause and allergy, was it the food , or was a reaction due to mold.

really , it is trial and error. And watch out for any meats, make sure to get hormone and Antibiotic free meats or you will be defeating the whole purpose of a diet.
