Diet Questions + Is Electrolyte Water OK?

I had a couple quick questions regarding this restricted candida diet. As I mentioned in a previous post, I just started the diet on Wednesday night. I am hoping that after one month of strictly following this diet, that I will be able slowly resume to my normal eating habits (minus unnecessary sugars). The main questions I have are mainly due to some of the contracting information that is listed on some of the Candida websites.
I am planning on only eating fresh proteins (poultry, fish, occasional red meat, occasional pork), vegetables, nuts, and water. I would like to add a few more things into this diet to make it more balanced. The things that I have a question about are listed below. Any help would be greatly appreciated.
Granny Smith apples – I have read on numerous sites that these are okay.
Tomatoes – I have heard mixed info about tomatoes. They would be eaten raw
Brown rice – (organic brown rice cakes, rice, etc.) Again, mixed info
This one might be more difficult to answer, but I am very curious. We have bottled water service at home. We get purified water and purified electrolyte water. I am wondering if anyone knows whether or not the electrolyte water is safe to drink. There are only three ingredients added to the water – Potassium, Magnesium, and Calcium. I am assuming that this would be okay, but I just wanted to check.
