I would suggest the 90% raw, 10% cooked/processed ratio is more volume than calories. It is more a mechanical consideration of making up for the lack of natural water content that has been removed from the cooked/processed foods. Eating a meal which is mostly raw salad veggies and adding enough cooked foods- say legumes or a little cooked tofu- or whatever else takes your fancy- to flavour the salad for you and make it more interesting if needs be, will make the whole meal hydrated enough for easy digestion, rather than just sticking a lump of cooked foods in your belly and waiting hours and hours for the body to break that lump down into something it can work with.
Being a vegan myself I am biased against dairy foods so take that into account with what I will say next. I do believe that dairy foods aren't much good for their calcium content. There is something in normal dairy foods that inhibits the intake of the calcium in it, that's what I have read. The best source of calcium I believe is raw nuts and seeds. These have the nutrients in them in a form that is best designed for us to absorb easily. Whereas cow's milk is a form of food that is best designed for baby cows. Also I read somewhere many years ago that NASA was doing a great deal of research into osteoporosis (and very likely the Russians too and that research may be available as well now) due to the fact that the bones are very badly effected by weightlessness, having the minerals leeched from them very quickly and measurably in a matter of days or weeks rather than years. So their research on the subject was highly motivated and they were making good progress when I read about it. Sorry I have no links or anything but maybe you can follow up on it and find something useful.
Oh and thinking of that too, hummus is a great choice for dipping raw veggies and have you tried nut butter dips? You can make them yourself by grinding up the raw nuts or seeds and adding oil or water. Here are is one recipe I just googled using the words 'raw nut butter recipes'.
