I have been vegetarian for nearly 20 years and mostly vegan for most of that time as well. Cheese has been my big bugbear in claiming veganity, and I used non animal rennet cheese and that only sparingly, like every couple of months, before Sugar free vegan cheeses came along. And I have never suffered from any kind of deficiency and never really took any special steps to avoid it so I'm probably not the best person to talk to for advice re your hair. I have never had to take supplements of any kind and don't give them to my healthy vegan children either. The important thing I think is to get as much raw food into your diet as possible. Often people who change over from eating meat to being vegetarian will go straight for the meat substitutes and soy isolate products which are okay as part of a varied diet but certainly shouldn't be used as staples. I think I have two main defenses against defiency's, one is eating raw foods and the other is a eating a huge variety of meals. With a such a variety as I have for myself and my children I believe there is little need to get into the nitty gritty of whether or not there is enough iron or b12 in my diet, we have enough variety to cover everything. However I know vegans that do take supplements so maybe they are needed in some cases.
I haven't read Weston Price Studies, I will do so soon and let you know what I think. I have read many scare studies, particularly from dairy corporations or meat industry propaganda which I have found have little basis in fact and are just scare tactics in my opinion.
You may not be in Australia but I help out on a website called Vegetarian Network Victoria, which might be a good place to start. It has heaps of resources in it's own right, as well as links to other sites and reading materials that are sure to go a long way in helping you find the information that you need. And if you can't find it all, send them an email about your problem, or ask on the forum there and they will be most happy to help out. :)
