Quinoa cocoa-cakes recipe



Now that I've been seeing a lot of recipes, I wanted to share with you my favorite:

Quinoa Cocoa Cakes:

1 1/2 Cup Quinoa flour
1/4 Cup cocoa powder (no Sugar of course)
1/4 Cup coconut oil (heat it slightly to make it liquid)
2 tsp baking soda
1 tsp vanilla (no sugar, alcohol)
2 tbsp Stevia
2 eggs (free range/organic)
1/8 cup flaxseed oil

Simmer the dry ingredients and mix them well. Mix the wet ingredients well as too. Then mix the dry and wet together until you get a very uniform color.

Grease the pans with a little coconut oil. Use wide pans. Spread the mixture but try to make it thin.

Cook in a preheated oven at 350 F for about 25 min, shut off the oven, and then let them rest for about 30 min inside the oven.

Makes about 15-20 small servings. According to the GI/GL of the ingredients you may have 2-3 small cakes together as a dessert, or 1 as snack between meals.


I eat these for a whole week, every 2 weeks.
