The green part has the majority of the phytonutrients in it.Just make sure you wash the skin realy well and cut off anything that might have been contaminated from contact with the soil.I usually get between 3-4 quarts from a medium sized melon,I scoop out all the meat before I juice the melon.The rhind is tuff so use a good blade and cut safely,they tend to be a bit unruly and messy.Good luck and happy juicing.
