Re: Cool: how much cilantro does it take to do that.
I would say 1/2 bunch, maybe more, depending on how I use it. I never cook it, but add it at the last minute to soups or use as a salsa (cilantro with onion pulsed in the blender, also add tomato when I like) I use this over food. Although the salsa is so good I can eat it straight. I usually put a little lemon juice and water in the blender to get it started, so I add some
Sea Salt . For more antioxidation, you can add cumin and/or oregano. If you use canned tomatoes, you can substitute that liquid. I put the whole bunch and a medium onion cut up into the blender, then I use what I want for that day. There is also a cilantro pesto recipe in the recipe forum that is excellent. When I make anything with cilantro, I try to use it right away to get the benefits, but it will keep in the refrigerator several days, and the pesto nearly two weeks. The Mexicans add chopped cilantro and onion to their Menudo, which is a tripe soup that is great for hangovers. I learned to like it with loads of cilantro and onion, and I can even put that in salted hot water and use it for my salt drink that morning.
