yes you should try it. I think it is pretty close considering. Some people use eggplant but I don't think that sounds as good.
It also kind of looks like bacon if you leave a little of the soft brown skin on it.
It makes a good snack just as is or I think would be kind of like bacon bits in salads or maybe omelets if one eats eggs.
I got it from this book I think (or maybe small chance it was one of her other books as I have several she does a good book for raw foods).
I got the regular hard brown coconut most of us grew up with a lot cheaper at the Asian/Indian markets than a regular store and one of my Asian stores sells young Thai coconut for $1.59 compared to like 4 bucks at whole food (they might not be as safe as the organic ones though).
You could try both young Thai immature coconut and the very mature brown coconuts and see which tastes better for you.
They also sell different kinds of liquid smoke which might give different taste to it.
If you have a temperature controlled dehydrator like Excalibur, and do it at 105 degrees, it will be a raw food.
I bet if one added it to a tempeh sandwich with veganaisse, tomato and lettuce it would taste kind of like a BLT.
In fact I tried it that way minus the tempeh and it did taste like that. Was very good sandwich. One coyld even use a raw bread with it if theyfind a good dehydrator bread recipe.
I use this soy sauce that's unpasteurized.
You can check around for best price or use a regular one form health food store if not concerned about raw. Its good to make greens when massage into raw kale or some other green I use white miso and raw apple cider vinegar with it garlic if desired and this can be eaten as it (massage the greens about 5 minutes) till wilted or one can dehydrate for to die for raw kale chips which is a good way to get raw greens into ones diet besides green smoothies. Can also add thinly sliced onions to the massage mix before massaging.
