Do you leave the eggs on your counter? Keeping them at room temperature as tsetsi recommended?
(reply) Yes, although ideally we want them to never had been refrigerated.
All inspections apply only to room temperature eggs. (Apparently, refrigerated eggs mask old eggs.)
An unrefrigerated egg should wobble when rolled across a table.
The egg white should not be watery like. The jellier the white the better.
The yolk should be round verses flat. Again, the rounder the better.
The yellower the yolk the better.
And most obvious, if you pick up any scent it is getting old.
I also inspect for cracks.
The egg yolk should not be broken when cracking the egg shell.
So they say, we can still eat the old eggs. Why heck, in China they bury them for years and years and are quite valuable. I thought it was nice to be able to recognise a fresh egg.

When you "rinse" your hair with the egg whites ... you commented that it was hard to brush out.
Am I to understand that as: "you leave it in, let it dry?" And, if so, does it flake off? You know, leave lint-like, microscopic things in your hair?
(reply) I take the glass of egg whites into the bath with me. After I shampoo I use a conditioner to brush it out straight and to get rid of the tangles. Rinse then I most precariously dump my ends into the glass of egg whites. I cup some into my hand and pat it on with a little skill otherwise it slips right off.
Then I rub some all over my neck and face, Then I blink my eyeballs into it. Yes, you heard me right, somewhere I read it was good for eyesight.
Then I sit back and relax as it dries on my face and hair.
Then I get up and RINSE again, rinse well.
Only once did I find a dried speck of egg white which was easy enough to remove.

You said something about eating a cold salad ... with marinated, raw beef ... what kind? Steak? Ground? What? And, is it REALLY good? Like, you REALLY like it?!?!?
(reply) Hard to answer that for you because when you put a plate of broiled, baked cooked meat under your nose, you go, ahhhhhhhhh.... that is really good.
When I put a plate of cut up raw steak under my nose, and I mean under and on my nose, I go, "Is there something there? " Apparently, we should never smell anything from meat.
It is really wet and juicy. :-D lol That is really good. I really like how it satisfies me and leaves me not hungry. I tried organic beef jerky for the first time the other day and it did not sit well in my tummy like raw but it would be good for emergencies to be able to dehydrate foods for hiking trips, and times of famine and such.
Top sirloin Steak texture verses amount of fat suits me fine for now. I'll buy any steak on sale this week. As long as it has never been frozen. Ideally, I should be eating the grass fed meat bought at a farmers market or Whole Foods store. Lately I have been just staring. Staring at things like a huge cow tongue and wonder how I could ever eat that.
I confess I ate some of my placenta, oh so many years ago, whipped up in a smoothy when I gave a home birth to my child. Maybe I could eat that tongue. lol
I blew some money on grass fed buffalo. It had very little fat. That's bad they say. Apparently, animal fat is good! Although not so much the muscle meat fat that is marbled in. Complicated, I know. I am missing my cans of wild salmon that I use to have almost daily. I look forward to having wild salmon raw when I can afford it.
From what I have gathered bone marrow is where the really good fat is at. Bone marrow drippings is as to our affinity for cold pressed oils.
If you are interested a nice start is to ask your butcher to slice up some round steak for carpaccio. He should slice it very very thin. Then add chopped tomato and onion, etc. Or, add ginger, honey , chopped walnuts and figs is really good.
It is really good that our taste buds are so remarkable adaptable.
I have only been on this journey for only a few weeks and already I am imagining what kind of bike I should save up for to trek across Europe. Or, maybe I should backpack it first. And holding still with my thoughts that I am too young to get married.

P.S. I think tsetsi mentioned that the eggs might make us sleepy while detoxing. I have found that to be true and also with the fresh meat. My dreams have been intense. Sometimes chaotic, last night I was filled with animals. For example a huge pig decided to sit on me while I was on a couch and before I could get up the huge oinker laid down on me and surprisingly I was not hurt or smashed by it. I do recall not being able to move but the dream could also have to do with all the blankets I had on top of me. lol
