i prefer good cast iron. wonderful pieces can be found at garage and estate sales. many older people have been cooking on cast iron for 50 years. you cant buy that kind of seasoning and smoothness on any pan, except teflon. cast iron was seen as too burdensome for the modern woman by its heavy weight so it was replaced by lighter aluminum. if not cast iron, then stainless or glass.
two things, though. 1, you should be eating mostly raw food anyway, and 2, you should be supplementing your diet with a tablespoon or two of good plant oil like olive oil, not avoiding oil in your diet. even better is hemp or flax or udos mix that has a lot of omega 3 in them. use the right oil and you have no fear. the best is unrefined oil. organic, of course.
