A Better question one may consdier is do you have patience in your cooking so that you may do it slow and not burn the foods which you are trying to prepare or do you want it done yesterday ?
It may be best to cook food slower and with as little water as needed and keep all of the juices in the food and not cook the juices out to leave in the pan and throw away latter !
For it is in the juices which are cooked out in which the Alkaline Minerals may go, so if you throw these away, they you may be losing the most Valuable portion of the meal !
So , in this case using a crock pot or stir frying or waterless cooking may be Better choices to use for preparing for Best retention of food value !
For if you steam vegetables and throw the juices out, you have thrown the Best part away !
And if you deep fry foods, this may not be good either, because this may Cause the oils to become Hydrogenated when the oils get too Hot and then the body can "NOT" Digest these foods ! !
So, it may be Best to plan ahead so as to figure out how to keep the Broth and Natural juices in the foods you are preparing !
