Well, my experience has been that with me insomnia is created mainly by
preservatives - main culprits for me being
sulfites . I have a host of other intolerances, though most of them have other effects.
Besides your insomnia do you have any other symptoms? I.e. migraines, constipation, the runs, problems with your sinuses, nightmares or night terrors, moodiness, stomach ache etc?
What did you cut out during the last year food wise? Is there anything you really, really crave and cannot get enough of?
A food journal is a good idea, however difficult to maintain. IF you do decide to do a food journal, also make notes of how you are feeling and whether you are having any symptoms.
The other idea I would have is that you do indeed fast for 14 days or so - then you have clean slate to work with in the sense that you can start reintroducing foods one by one and see which one it is you react to. This method is challenging as well.

Insomnia is not in your head - it usually has a cause, one that can be made worse by stressful times but it's definitely something which is real. 20 years of insomnia, night terrors, moodiness, constipation and now I am for the most part able to sleep at night and I am much less moody etc.
