I just replaced my mattress last month! I did every search on-line I could think of, and I kept coming up with natural latex being the healthiest.
The one I wanted was made by the Amish, or so they said, but cost $1700 for a queen.
I didn't want to pay that much so I made compromise and went with a synthetic/natural blend, 40/60 I think.
I love it! it is very very comfortable, and they are said to last 30-50 years, I hope that is true!
The company I went with make the mattress as it is ordered, and I had it in two weeks! We went with the medium firmness, they decide by your weight.
Also the cover of the mattress is cotton witch is great!

The problem with the tempurpedic is they break down after a few years, the foam is not very durable, and yes they are said to off gas quite a bit!

P.S. I also bought my son a new mattress, but could not afford to buy him the same, so I found Ikea to have the least toxic mattress, they don't use any chemicals except one that is required by CA law and then it is the least toxic one possible, other companys use far more toxic ones!
Here in CA by law you have to have a doctors note to put your child on a mattress that does not have flame retardant, I don't know how they could enforce that!
Anyway the Ikea one only cost $99 for a twin, and my husband and I think its very comfortable!
