Thanks for answering JV. So far, I am using only 1 tablespoon per day, melted in a cup of herbal tea.
This is what I ate today just before my run to the bathroom:
Before breakfast: 1 mug peppermint tea with coconut oil in it.
Breakfast: 1 large soup mug of homemade miso soup with seaweed (no tofu, no meat, just the broth with seaweed in it)
Lunch: 1 large bowl of homemade tom kha soup (Thai chicken ginger soup made with coconut milk).
Shortly after eating the lunch soup, I started having problems. I have eaten the above meals before without the oil and have been fine. So, I think it's the oil. It was just weird because it was only 1 tbsp of the stuff. Maybe I should try only 1 teaspoon?
