Weight Watchers has this great rule that I've always followed by instinct. If there's something you're not supposed to have, then when you DO have it, try to have it in your most favorite way possible. They actually have a term for this word but I can't recall it, a girlfriend of mine is on WW so she told me.
So anyway, I try to limit white flour, which means I tend to not have sandwiches, I use tortillas if I use anything and have a rollup. Instead, I save my white flour rations for french toast and CAKE which I ADORE LOL!
I tend to avoid chocolate, avoid avoid avoid, because I just don't digest it well. I have one recipe for Devil's Food Cake that I can digest just fine, so I'll make that as a Black Forest Cake - whipped cream and cherry filling. :)
Mostly I make butter cakes and chiffon cakes. They don't seem to bother my system at all, and since I rarely use heavy frosting - usually just a glaze - I don't overdose on
Sugar and bother my hypoglycemia.
My other passion is to make Souffles. They're not that bad at all, because there's only two tablespoons of flour, the rest is milk and eggs and whatever you use for flavoring, such as vanilla or blue cheese. Very light, delicious, satisfying, and really easy to make once you get the hang of it.
I'm also getting into making rolls, coffee cakes, and even ::gasp!:: donuts which of course have to be deep-fried, so I don't do that very often. Just one batch so far, that lasted 2 or three days of beignets for breakfast! :) At least this way I know the oil is CLEAN. I simply cannot eat commercial donuts anymore, the grease is reused too many times and makes me very ill and break out terribly.
When I need something sweet and haven't baked, I have many alternatives that are quite safe and some even healthy.
Puffed wheat cereal
Dried Cranberries - ever try them? They're delish!
tea with honey
A kind of chai without black tea - basically simmer milk with tons of spices. Also have an almond version of this that I bought at an Indian food store. Very healthy, balancing, natural laxative, good for digestion.
Bosc Pear
Master Cleanser Lemonade Drink or
Lime, water or soda water, fructose, dash of salt - very hydrating. The best thing to do after sweating a lot of when suffering from diarrhea.

Chinese Almond Cookies (almonds are very balancing!)
