Its difficult. Its a judgement-call. You could try and educate them on the benefits of unrefined sea-salt and how it will counteract all the health problems of refined sodium chloride.
Or you could just leave out all salt and give them bland tasting food.
Actually as unrefined
Sea Salt is stronger naturally you would be using less anyway. So I would say carry on using sea-salt in the knowledge that you are doing your customers good.
If you can educate them at the same time then you are doing them a double favour.
Remember not all salts labelled "sea salt" are unrefined.
