Hey, "Candida Stinks" (great name!)
I hear your fatigue and I understand. I've been there, too. When I was very sick, it often felt like too much effort to even breathe.
The thought of staying on some kind of diet long-term seems so impossible at those times, doesn't it? You just want to cry.
I'd like to offer you a different perspective and some encouragement. Please pay close attention to Michelle's post (Remi96). I've been very grateful for her advise, because it worked well for me, and I didn't have to wait months. I started feeling better right away.
Although I still have a long way to go with this candida battle, I began to regain energy almost immediately once I began the P&B shakes. Within a week, you'll likely feel better. Not "cured," but it will be less of a supreme effort to even contemplate keeping on a diet. That is important and sounds like it is a world apart from how you are feeling right now.
I'd suggest that you also keep it simple. There are so many different perspectives on this forum. That's important, because everyone's different. However, it is fine to start with the shakes, and just start with eliminating sugar, malt & vinegar. As you get a little more energy and start to feel better, then it is easier to keep track of your diet. You may find other offending foods (I never knew that corn made me feel so crappy, because I felt crappy all the time). Just take it step by step at that point.
So, I hope that just making a few changes like this sounds more workable for you. With more energy and a clear head, you'll be able to consider your options and have the energy to follow through.
