Usually when people talk about frying they mean deep-fat frying. You know where the oil is heated to high temperatures, and the entire food stuff is immersed and fried at high heat.
Stir frying isn't as bad because you only have a tiny amount of oil and you only fry for a short amount of time. Although the bad thing about stir frying is that the oil is heated to very high temperatures.
Frying eggs is the best form of frying because you only use a small amount of oil and don't heat up the oil much. When I fry eggs I always keep the gas on the lowest setting.
Once you add water you are no longer frying because the temperature is limited to 100 degrees centigrade, which sounds like a lot, but isn't much compared to the temperature that oils can reach.
