Recipe for chutney:
Pick a (good) handful (both hands) of mint. Wash it.
Dice 1/2 a large red onion or 1 medium red onion.
Pick a few tomatoes (preferably home grown).
Put all the ingredients in a blender.
Add 1/8 cup of water.
Add 1/2 teaspoon of unrefined sea-salt.
Add 1 heaped teaspoon of crushed pomegranate seed (this can be found in many ethnic stores - can be omitted).
Don't worry about the ratios too much - as long as they are ball-park that should be fine.
If you like things hot you can add chillies (or chillie powder)to taste, but many people with candida may not like to.
Blend until smooth (may take a minute or two depending on the blender). If its too thick add more water, but you shouldn't need to add much.
If you have the ingredients to hand the whole thing should take 5 minutes or so.
Stick it in a container and pop into the fridge. It can be eaten straight away, but chutney actually tastes much better (and milder!) if left for a few hours.
Use it as an accompanyment to your meals.
