Thanks, chiron! I bought an organic pineapple but it's still pretty green. It was the only organic one I could find but it's taking its sweet time ripening up. So I guess I'll abandon that one and go up to the store and hunt for a super ripe one. I don't know anything about making vinegar but that makes sense. I just thought it was better to use organic, so thanks for telling me!
I have some coconut vinegar I bought from Wilderness Family Naturals that I was thinking of using to make my pineapple vinegar - (I'm thinking Pina Colada vinegar) do you think that would work or should I stick with the apple cider vinegar?
So when you say half a pineapple and then fill the container up with vinegar, are you talking about a gallon jar? And then you say, "the more the better" so would it be better to fill the jar with half pineapple puree and half vinegar? Sorry for all the questions, I've never done this and I really want it to come out good. I'm going to use it as a digestive aid so I reealy want it to be "rich and mellow" instead of harsh and burning!
