I'm wanting to strain and store my WK in 2 days now. 3 day ferments taste good but have more alcohol, and I'm looking for as little buzz as possible. I drank 3+ cups of it yesterday. I have about 3 recipes of it in my fridge, and they ALL taste good!
This is a batch in a gallon jar I'm going to "harvest" today (with lemon, figs, raw sugar, and BSM) :
I may get some 2 quart sealable jars and make 6 cups or so at a time. Sealed jars seem to make a fizzier drink, but it needs to be done right. I forgot to add baking soda to this batch, but I think it'll be OK. It's quite forgiving and seems that most any recipe works. It's a great drink and it seems to have added something to my body that I needed! I seem to feel fatigue right after I drink it, but that seems to fade fast, and *may* be the booze buzz.
