I just recently discovered how good raw parsnips are,
which is not to say the oven-roasted parsnip fries aren't also very good. (esp. with a dip of blended hummus and rapini) But parsnips cut in thickish matchstick pieces are great for the naturally-fermented vegetable mix. Other good roots: parsley, celeriac. Of course beet and carrot.
