what would you say about these two?
True cinnamon is great. Although even this comes in different grades. What is normally bought in stores is not true cinnamon, and even if it is the cinnamon is generally of a low grade (oil content usually under 1%). What you buy in bulk in health food stores generally has a 2% oil content, although a 3% and 5% are available. I bought some that is around a 4-5% oil but have not opened the pack yet to try it.
Honey depends on several factors such as the source, whether it is raw, ratios of different sugars in it and how dark it is. Darker honeys have a higher antioxidant content. I am not a real big fan of most honeys. I don't like the extreme sweetness. But I do happen to like honey made from dandelion flowers and blackberry honey.
*It's important to have real cinnamon, right? The difference between fresh organic stuff and the second-rate cassia and/or ancient baking stuff most people are familair with is incredible.
I don't worry about whether or not it is organic. The oil is a great insect repellent so I doubt they would spray it. But yes, there is big difference between true cinnamon (Cinnamonium) and Cassia. But as with oil content, people generally do not realize there is a difference so the cheaper stuff is most frequently pawned off on the public.
I'm thinking of a kind of paste for toast, or just for elixir.
What else would be great in it? Powdered rose petals?
Rose petals vary too much in taste from one type of rose to another so there would be too much variation in the flavor to the honey. I have eaten some rose petals that were pretty good and some pretty nasty, so things with more consistency would be a better choice.

Hmmm..... Cinnamon honey with camphory undertones......... That does not sound good to me.
other ideas?
My recommendation would be to focus more on essential oils added to the honey, and maybe leave the cinnamon out of some. With the cinnamon I would say sweet or bitter orange oil. Without the cinnamon geranium, lavender or clary sage.
I'm interested in genuine powers of good, not just pretty ideas--though I know that might not be exactly clear.
If you do want to go with powders instead of oils I would try lavender, nutmeg (small amounts), schisandra, or juniper berry.
