The E coli is from feces and improper wiping is a common cause. Women should wipe away from the vagina, not towards it since this can lead to E.coli infections in the vagina.
As far as getting rid of the infection uva ursi or the closely related manzanita leaf are the best options for a urinary tract infection (UTI). But it needs to be taken with a little calcium citrate or baking soda to alkalinize the urine since the hydroquinones need an alkaline environment to function properly. Here is a link to my write up on UTIs:

Also tell her to drink plenty of water throughout the day and urinate frequently. This is a common mistake women make. When they do not urinate frequently the bacteria has an easier time of working its way in to the bladder and the kidneys. This is because the urethra is so short in women. Same reason women are more prone to UTIs, because their urethra is shorter than in men.
I recommend holding off on the probiotics until off the antibiotics and focus on prebiotics to feed the survivors in the meantime. By the way uva ursi is specific to the urinary tract and so will not adversely affect the flora like conventional antibiotics.
