"As with all gluten intolerances, the symptoms of celiac disease vary widely. Celiac disease is typically thought of as causing diarrhea, abdominal pain, gas, and bloating. However, recent studies have clearly shown that most people with celiac disease do not have these symptoms. They may experience many other symptoms, including constipation, weight gain, fatigue, headaches, heartburn, skin problems such as eczema and acne, or any number of other health problems....It is also not uncommon to have celiac disease and yet not experience any symptoms at all. Recent research indicates that as many as half of those with celiac disease are considered asymptomatic. And a significant percentage of people with celiac disease do not get diagnosed until, after decades of good health, one of the symptoms or problems associated with celiac disease (listed in the previous chapter) is finally found, such as osteoporosis. Or they may suffer for decades from something such as chronic anemia (iron or B12 deficiency) before they are finally tested for celiac disease."
