Milk has been consumed by everyone forever. It's difficult for me to think of it as bad. Same with meat, eggs, butter, chocolate, and all the rest of the stuff that's been the mainsteam diet.
Everyone's heard of the people who live to be 110 who drink vodka and smoke every day. Can't you see their wrinkled, weathered smiling faces? They usually live in some freezing cold third world country with no internet or vitamin store. My Dad's 80, very active and has many "vices", but he loves life.
Like you said, it's probably because they have very little stress (although living in their situation would be very stressful to me), they enjoy their "vices" and they have good attitudes.
It's hard to draw the line of how far I need to go to be healthy.
They are wrong about eczema and psoriasis being related. Eczema involves liver dysfunction and an allergic response. Psoriasis on the other hand is a chemical imbalance between cyclic adenosine monophosphate (cAMP) and cyclic guanosine monophosphate (cGMP). When cGMP levels exceed cAMP levels the cGMP causes the cellular proliferation seen in psoriasis.
The reason they are seeing increased psoriasis with the dairy products is because milk is very high in cGMP and low in cAMP.
What about kefir? Would it be better to eat other fermented foods?
Kefir is not much of an issue. First you will not be drinking enough to pose any problems. And the fermentation uses up most of the sugar. The acids will help with the mineral absorption and protein digestion.
And there are many other ways to make kefir. Water, coconut milk, rice milk, soy milk, etc.

It is better to take the kefir first thing in the morning as soon as you wake up. Then go about your day for a little while before eating breakfast. This works best since eating will increase stomach acidity and slow down emptying of the stomach. You want to get the bacteria out of the stomach and in to the stomach as soon as possible. So you should give the kefir 30 minutes or more before eating. Also, some foods may contain antiseptic spices. Muesli is fine, but if people eat other foods like a spicy omelet they may kill the flora.
