The reason it is hard to stop eating is because the body does not adapt to change quickly. If one has had very poor eating habits, it is much harder to do a cold fast than someone who has been vegan for a long time.
This is why I practice alternate fasting. I'll drink orange juice, eat some fruits or toast one evening, and then not eat anything again the next day. For a long-term cleanse, this is easier than pure fasting, because you still get to eat something every other day or two.
The more you fast, the easier it is to do. I can fast for a very long time if necessary. But I prefer not to fast past four days in sequence.
Also if you are toxic, more fasting means more detox. This usually means more pain/cramps/headaches and other symptoms of the body correcting itself. These can not only be uncomfortable, but they can be hazardous if you are still working or operating motor vehicles. Sometimes, taking the slow road to health is the safer choice.
