Your question: I find it strange that the sweeter and tastier the fruit and veggies are generally the higher brix they are and the more alkaline minerals they have. Also, BSM is definitely a sweetner and it is full of minerals. And yet, with chocolate it seems the opposite is true...the darker and more bitter it is the more alkaline minerals it has...this is just strange to me.

Answer: The foods we need to eat more of may be sweeter than those foods that are Concentrated with certain Alkaline Trace Minerals that may make them Bitter tasting?
This is True with certain Herbs as well, which have a bitter taste !
If the Raw Dark Chocolate and Bitter herbs tasted Sweet and still had a High Concentration of certain Alkaline Trace Minerals we may eat too much of Specific Trace Minerals?
This is WHY some Minerals are called Trace, because just a Very small amount is needed ! Take asparagus for example it contain Arsenic and we may Die from arsenic Poisoning if we get more than a Trace amount ! Of course the arsenic in asparagus is Complexed, so it is different than taking Elemental arsenic, which may Kill us if we took the same amount as we may get in eating asparagus?
As usual not everything may be as it may 1st seem to be !
Edit: I should have mentioned that it may be in some Seeds of Herbs etc that the most Bitterness may be found because of some of the Reproductive Trace Minerals that taste Bitter, but are needed for Reproduction ! Example: Zinc, Manganese, Copper, Iron, etc !
