Not sure about fluoride content although I am sure that the better the quality the tea, the lower the fluoride content will be... I purchase premium, quality, bulk, organic, and free trade if possible. Of course we then have to trust the marketing and label.
In addition, and in general, the earlier harvest greens (teas) will have less fluoride than the later harvests.
I used a bottle of RAW, UNFILTERED, Kombucha to create my own culture by seeding my first batch with the purchased brew... I had to toss the first batch, could not drink it... too strong, but I have had my own starter culture and mushrooms ever since.
May have been the following brand that I used to "seed" my first batch and create my first mushroom or scoby...

In addition to kombucha, I have made my own yogurt and kefir, but that is about it at this point. My understanding is that the tea is used for flavor... everything else is about the
Sugar and bacteria\fungal action. So any similar brew should work.
I want to get into fermenting vegetables in the next few months and am looking at fermentation crocks and such now...
