Raw veggies aren't hard on the digestive system. It is the high water content in raw foods that makes them more digestible, as well as the living enzymes. Fruit is higher water content than veggies though and better to break your fast with than veggies. Break your fast on fruit for at least a day or two before adding a meal of salad veggies. The longer your fast the more you will want to stick to the softer fruits before introducing more variety. Salad veggies are not hard to digest however, it's just that fruit is a bit easier and the idea is to really ease the digestion system back into working order. It's almost like running in a new engine, just take it very slowly to start with.
Edit: Forgot to mention the bean thing. Chris is right about leaving about a week depending on the length of your fast.. maybe a bit longer if you take your fast past the two week mark. However, if you do eat cooked beans or cooked anything else during your refeeding period, try and make it just one type of cooked food added to a salad. Keep it simple, both to remember and for your body to process.
