Sounds to me like perhaps you could be allergic or intollerant to certain foods which is why you are bloating. Eating things your body cant tolerate can also put on weight and esp. fluid retention.
A long time ago I lost a lot of weight and minimised the bloating by cutting out bread and dairy. It was something like 10 kg in a month and my weight stabilised to what it should have been. Years later I ended up finding out I am allergic to yeast and intollerant to lactose (all dairy). If I have either these days my thighs, butt and stomach will all appear puffier and I look fatter and I go up about 2-3 kilos. Take these out for a week or two and I once again appear firm and my weight stabilises.
I also do Atkins style eating but with more veges as I find that maintains my weight and if I have a bad week I go back to induction to lose what I gained. I am in the process of attempting to lose body fat at the moment - my weight is good but I want to build lean muscle mass and tone up. I find low carb eating really helps you to lose a lot of weight but its up to the individual to find something they can work with.
Another thing which you have probably already heard is dieting over time can actually increase your size and weight. It slows your metabolism. Especially dieting where you are not getting all your nutrients as you can end up eating away at your muscle mass which in turn makes your body need less calories each day. Building 1 kg of muscle mass can allow your body to need an extra 600 calories each day.
So my recommendation would be to skip bread and dairy for a week and see if the bloating goes down (also try to not have
Sugar in that week either or anything else you feel you react to).
I would recommend (as hard as it might sound) that you find a nutritional programme that you can follow permanently instead of dieting. Find something you can do and then occaisonally have treats. Also make sure you are doing weights training at gym to increase muscle mass as well as consistent cardio. Remember if you are doing weights you will put on more weight but will be smaller so measure your progress by tape measures and how you feel not scales.
