Your post: This year, I purposefully left citrus that I picked back the end of January out; I did not store it in the refrigerator/freezer except for my stash for the summer/fall... this week I am juicing the last of what I have picked so far...
While the fruit rind has dried down, the insides are every bit of juicy as the day I picked them. They are not much to look at. I have had NO fruit flies and only 1 grapefruit got a bit of mold on it... the oranges and lemons are in GREAT SHAPE... a great high brix crop this year.
In fact, I have been juicing for my family every day since right after the holiday season and my wife credits the juicing with none of us being sick this winter/spring.
It may not be the juicing as much as the quality of the fruit :-)
I have about half an orange tree left to harvest (this Saturday) and should be good with oranges through about April... I am going to miss the citrus when it is gone :-(
But then it will be time to move onto other fruits :-)
Cactus is in bloom... Whoo Hoo. The desert is absolutely gorgeous this time of year.
It is hard to believe fruits, especially citrus can dry down like this unless you see it for yourself... my mother, an avid organic gardener since the 50's was really amazed as well; especially that there was no fruit fly infestation at all. One usually sees these pesky things with rotting fruit... not this stuff. Perhaps we are getting better at caring for the trees/crop :-)

Answer: It would be nice if more folks would be able to see 1st hand what you are seeing, so that they may be able to Better understand that there is a Great Difference in the Quality of Foods for folks to eat !
As I mentioned in the beginning, if Frutis and Vegetables are of Top Quality, then they will Dry down and Keep and "NOT" Rot and Spoil like the Poor Quality foods do!
Maybe more folks would then realize "WHY" so many of them are Sick and Diseased?
"WE" Are what "WE" Eat !
