I used to be a coffee lover too... for many years.. and up till about two years ago I'd have coffee every day.
It's actually a relief not to have that need for coffee, very liberating... how I transitioned may be of help to you.
We have here in Australia a hot drink called chai, made from cinnamon, cardamon, etc. I started to have that instead of coffee... it was quite sweet and rather satisfying, much like a coffee can be. Added bonus is there's no caffeine in it.
It was the only hot drink I found to have that satisfaction factor. Probably has a few not so good ingredients as well.
I forced myself to order it if I was meeting up with friends, etc.
After a while, I couldn't face the taste of mediocre coffee !
Chai took it's place....and then eventually I got sick of the sweetness of chai and completely weaned myself from that as well.
These days I might have a very good quality espresso once every 6 months or so, when out and about. I don't keep coffee in the house, if I have guests I have to remember to buy coffee and milk. Remember, I used to have coffee every day!!
Coffee always smells better than it tastes, so I've learned to enjoy the aroma and leave it at that, knowing the disappointment of the flavour , the bitterness. The habit of having a hot drink by my side was broken when I realised that it was only a habit, because the flavour was not what was making me drink it, he he!
