Have you tried mixing just a little bit of other veggie juice with the carrots? Like 1/4 of a piece of celery, 1/2 of a cucumber, 1 little radish, couple pieces of lettuce, a slice of pepper. That's what I do, you don't have to add a lot, just a little.
I know what you mean about the stress, I'm the same way. But hang in there, YOU CAN DO IT!! I know you can. I've made it this far, day 21, so can you!!
